Mediterranean Flounder

For my "new year's resolution"/month-long slight dietary alteration I decided to try a Mediterranean diet. At its most basic level (at least to me) this means cutting out processed foods and minimizing red meat consumption. People living in the Mediterranean region have been shown to have some of the longest life spans on Earth, and they eat a diet based on seafood, whole grains, and lots of olive oil. I am attempting to emulate this lifestyle for a while. It's not so much a weight-loss diet as a healthy lifestyle change. I really really like it, though it does require a little more effort to prepare all fresh meals, and seafood can get pretty pricey.

One of the first things I cooked after the new year was Mediterranean flounder. I started with this recipe, but made it a little simpler.

The Mediterranean diet is heart-healthy AND delicious! No complaints here.

To simplify given recipe, substitute a can of tomatoes for the plum (if you so desire).  After sauteeing all ingredients for the sauce, simply add your flounder fillets directly to the pan and simmer until cooked through. Complement your fish with heart-healthy sides like seasoned avocado and quinoa, serve on a farmhouse plate, and enjoy!
